Cajun Salmon Bites With Kale & Sweet Potatoes



Salmon Bites are delicious and easy to make. After a long day of work you deserve a meal that feels like cheat but isn’t…AND it takes less than 30min to make!


Ingredients:

  • Salmon (Fillet & Skinless)

  • Olive oil ( or oil of choice)

  • 1 Tsp of onion powder

  • 1 Tsp of ground pepper

  • 1 Tsp of Salmon Seasoning ( Trader Joe’s)

  • 1/2 Tsp Salt

  • 1 Tsp of Cajun Seasoning

  • Onion

  • Sweet Potatoes

  • Kale and Spinach


(Note: If you don’t have salmon seasoning, use paprika instead, I ran out of paprika and had to improvise, the salmon seasoning also contains paprika so that worked out!)


Salmon Bites

  1. Cut Salmon Fillets into Cubes ( For me it’s easier to slice down vertically first).

  2. Drizzle with oil of choice ( I used Olive Oil)

  3. Sprinkle your mixture of Seasonings and massage it into the salmon.

  4. Put stove on medium-high with a pan of oil.

  5. Cook salmon on 2min per side

Veggies


  1. Boil sweet potatoes while you cut your kale and onion

  2. Once sweet potatoes are softened enough to cut, let them cook and cut them into small cubes.

  3. Put stove at medium-high and sauté your veggies!

  4. Add salt and pepper as desired.
